Cook the Sausage:
Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Crumble the Italian sausage into the pan and cook until browned and fully cooked, breaking it into bite-sized pieces. -
Add Seasonings and Peppers:
Sprinkle in salt, black pepper, and Italian seasoning. Add the diced red, yellow, and orange bell peppers, cooking for 4 to 5 minutes until they start to soften. -
Garlic and Wine:
Stir in the minced garlic and sauté for about a minute until aromatic. Pour in the white wine, scraping the pan to loosen any browned bits. Let it simmer for 2 to 3 minutes to reduce slightly. -
Tomatoes and Herbs:
Add the canned diced tomatoes along with their juices, parsley, and basil. Bring to a gentle simmer and cook for about 10 minutes to blend the flavors. -
Prepare the Noodles:
While the sauce simmers, cook the egg noodles according to package instructions. Drain and set aside. -
Combine and Serve:
Mix the cooked noodles into the sauce until well coated. Serve immediately, topped with freshly grated Parmesan cheese if you like.
