Grind the mixture finely using a mortar and pestle to ensure a smooth, even consistency.
Place the whisked eggs in a shallow bowl.
Dip each piece of chicken into the egg mixture, ensuring it is fully coated.
Place the egg-coated chicken pieces into the bowl with the flour mixture, one at a time. Ensure each piece is thoroughly coated by turning and pressing it into the mixture.
Heat the oil in a large frying pan over medium heat. The oil should be hot but not smoking.
Carefully place the coated chicken pieces into the hot oil. Fry on low heat without covering the pan, turning occasionally to ensure even browning.
Cook the chicken until it is golden brown on all sides. This should take about 10-15 minutes.
Once the chicken is browned, reduce the heat to low, cover the pan with a lid, and continue to cook for another 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
Remove the chicken from the pan and place it on paper towels to drain any excess oil.
