Lemon Meringue Cheesecake

 

Ingredients:

Crust:

2 cups graham cracker crumbs.

1/3 cup sugar.

1/2 cup melted unsalted butter.

Cheesecake Filling:

24 ounces cream cheese, softened.

1 cup sugar.

3 large eggs, at room temperature.

1/4 cup fresh lemon juice.

2 teaspoons lemon zest.

1/2 cup sour cream, at room temperature.

Lemon Curd:

3 large eggs.

3/4 cup sugar.

1/2 cup fresh lemon juice.

6 tablespoons softened unsalted butter.

1 tablespoon lemon zest.

Meringue:

4 large egg whites, at room temperature.

1/4 teaspoon cream of tartar.

1/2 cup sugar.

Instructions:

Step 1

First, preheat oven to 350°F, prepare crust, and bake for 10 mins.

Step 2

Then, mix filling ingredients, pour into crust, and bake for 45-50 mins.

Step 3

After that, make lemon curd, spread over baked cheesecake.

Step 4

Next, whip meringue until stiff peaks form and spread over the lemon curd.

Step 5

In this step, bake for 10-15 mins until golden brown.

Step 6

Finally, cool, then refrigerate for at least 2 hours before serving.
