My German neighbor shared this recipe, and now my husband can’t get enough!

Directions

  1. Preheat oven to 350°F (175°C).

  2. Heat oil in a large skillet over medium-high heat. Season pork chops with salt and pepper, then brown them on both sides, about 3–4 minutes per side. Remove and set aside.

  3. In the same skillet, sauté onions until soft and translucent, about 5 minutes.

  4. Stir in sauerkraut, apple juice, and caraway seeds. Mix well.

  5. Transfer sauerkraut mixture to a casserole dish and place pork chops on top.

  6. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes to brown the pork.

  7. Serve hot, garnished with fresh parsley if desired.

Variations & Tips

  • Sweeter twist: Add a sliced apple or a handful of raisins to the sauerkraut mixture.

  • Spicy kick: Sprinkle in a pinch of red pepper flakes.

  • Creamy texture: Stir in a spoonful of sour cream before baking.

  • Extra veggies: Layer sliced carrots or potatoes into the casserole for a heartier dish.
