1 pound smoked turkey sausage, sliced into rounds
1 large onion, peeled and diced
6 baby red potatoes
6 baby golden potatoes
1 tablespoon olive oil
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 teaspoon Cajun spice
Instructions:
Preheat the oven to 400°F.
Line a spacious baking sheet with aluminum foil and coat it with cooking spray. Set aside.
Cut the turkey sausage into substantial chunks.
Dice the onions into generous pieces.
Rinse and pat dry the baby potatoes, then halve them.
In a large bowl, combine the sausage, onions, and baby potatoes.
