Instructions:
Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a medium-sized bowl, sift together the flour, salt, and baking powder to ensure even distribution. Set aside.
Step 3
In a separate mixing bowl, combine the softened butter and granulated sugar. Mix until smooth and creamy.
Step 4
Gradually add the eggs to the butter and sugar mixture, mixing well after each addition.
Step 5
Alternately add the dry flour mixture and 1/4 cup pineapple juice to the butter mixture, mixing until well combined.
Step 6
Stir in the milk and then gently fold in the drained crushed pineapple.
Step 7
Grease a loaf pan and transfer the batter into it, spreading it out evenly.
Step 8
Bake in the preheated oven for 50-55 minutes, or until a skewer inserted into the center comes out clean.
Step 9
Let the loaf cool in the pan for 10-15 minutes before transferring it to a cooling rack to cool completely.
Step 10
In a small bowl, mix together 2 tablespoons of pineapple liquid, 1 cup of confectioners’ sugar, and 1 teaspoon of vanilla extract until smooth.
Step 11
Once the loaf has cooled completely, brush it with the glaze. Allow the glaze to set before serving.
