HOW TO MAKE PRIMAVERA PASTA SALAD

This Primavera Pasta Salad is ideal for a wholesome lunch or as a quick side dish for your next picnic, BBQ, or potluck since it is filled with plenty of fresh spring vegetables.

We greatly wait for spring, with its fresh air, beautiful weather, trees that have new leaves, and birds who are singing their hearts out!!! A pleasant difference from the vegetables offered in the winter is the abundance of vibrantly colored and newly harvested veggies that come with the coming of spring. With today’s Primavera Pasta Salad, I made the decision to combine all of these ingredients into one huge pasta salad.

One of my go-to meals for springtime is pasta primavera because it makes the most of what the season has to offer in terms of its bounty of fresh vegetables and herbs. Typically, it is a warm meal that is prepared with pasta, various vegetables, and parmesan cheese. This Primavera Pasta Salad took me approximately 15 minutes to prepare. While the noodles are cooking, you may cut the vegetables, create the dressing, and grate the parmesan. After the noodles are done cooking, you just mix everything together.

THE INGREDIENTS LIST:

Your fav pasta; use a 14-oz pkg.

1 Cup.Of shredded carrot.

1 Cup.Of thinly diced red bell pepper.

1 Cup.Of small diced broccoli florets.

1 Cup.Of sweet peas.

1/2 Cup.Of fresh chopped parsley.

THE Vinaigrette ingredients:

1/2 Cup.Of olive oil.

1/4 Cup.Of red wine vinegar.

1 Tsp.Of dijon mustard.

1/2 Tsp.Of pure maple syrup.

A minced garlic clove.

1/2 Tsp.Of salt.

1/4 Tsp.Of black pepper.

PREPARATION:

1st Step

Start by bringing a large pot of water to a boil, then cook the pasta following the instructions on the box.

2nd Step

After cooking, rinse the vegetables under running cold water and arrange them in a large bowl.

3rd Step

Place the cashews and nutritional yeast in the bowl of a food processor and pulse until the cashews are as finely ground as breadcrumbs.

4th Step

Put all of the ingredients for the dressing into a jar or a small bowl, and whisk them together until they are incorporated.

5th Step

To the noodles, add all of the veggies, along with the parsley, and mix well. After adding the dressing to the pasta salad in the required quantity (it’s possible that you won’t use it all), mix it once more.

6th Step

After tossing the spaghetti one more time, sprinkle the vegan parmesan over the top. You are free to use whatever quantity of vegan parmesan cheese that you choose. I like it a lot on mine!
