Slow Cooker Ham and Potato Soup

 

INGREDIENTS:

8 cups diced russet potatoes

1 diced yellow onion

2 large carrots, peeled and chopped

1/2 cup chopped celery

16 ounces Cubed Ham (2 packages of Smithfield Anytime Favorites™ Cubed Ham)

1 teaspoon Kosher salt

1/4 teaspoon fresh cracked black pepper

1/4 cup flour

4 cups chicken broth

1 1/2 cups heavy cream (whole milk can also be used)

1/2 cup sour cream

INSTRUCTIONS:

Add diced potatoes, onion, carrot, celery, ham, Kosher salt, pepper, and chicken broth to your slow cooker. Cook on low for 7-8 hours or on high for 4-5 hours.

Mash about 1/3 of the potatoes using a potato masher (the ham won’t mash much).

Stir in flour, heavy cream/milk, and sour cream. Cover and cook on high for an additional 15 minutes.
