Strawberry Cream Cheese Icebox Cake

 

Instructions:

Step 1

Wash, hull, and slice the strawberries to about 1/4 inch thickness. Set them aside.

Step 2

Arrange a layer of graham crackers on the bottom of a 13×9 inch baking dish and set aside.

Step 3

In a large bowl, beat the cream cheese and sweetened condensed milk until smooth and creamy.

Step 4

If the mixture doesn’t thicken after about 4-5 minutes, add the pudding mixes and milk. Continue to mix until thickened.

Step 5

Gently fold in 2 cups of whipped topping into the cream cheese mixture.

Step 6

Spread half of the cream cheese mixture evenly over the layer of graham crackers in the baking dish.

Step 7

Arrange a layer of sliced strawberries on top of the cream cheese mixture.

Step 8

Add another layer of graham crackers on top of the strawberries.
Repeat with the remaining cream cheese mixture, followed by another layer of sliced strawberries.

Step 9

Cover the baking dish with plastic wrap and refrigerate for at least 6-8 hours, or overnight, to allow the cake to set.

Step 10

Before serving, spread the remaining whipped topping over the top of the cake.

Step 11

Optionally, sprinkle crushed graham crackers on top for extra texture and flavor.
