Instructions:
Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a large pot, bring water to a boil over high heat. Add the pasta shells and cook until slightly firm, about 13 minutes.
Step 3
Drain well and set aside.
Step 4
In a large skillet, brown the ground beef over medium heat. Drain excess grease, then add the taco spice blend and water.
Step 5
Stir well and simmer for about 5 minutes until thickened.
Step 6
Mix the taco meat with 3/4 cup Cheddar cheese and 3/4 cup refried beans. Stuff the mixture into the cooked pasta shells.
Step 7
Spread 1/4 cup of salsa evenly in a 9×13 inch baking dish. Arrange the stuffed shells on top of the salsa.
Step 8
Spoon the remaining salsa over the shells.
Step 9
Bake in the preheated oven for 40 minutes.
Once done, sprinkle sliced green onions and 1/4 cup shredded Cheddar cheese over the shells. Serve with a dollop of sour cream on top. Enjoy!
