Mashed potatoes are a beloved comfort food in my home—no matter how often I try to lighten them up or add a healthier spin. But one simple tip I discovered on TikTok completely changed the way I make them: ditch plain water and use chicken stock instead.
The idea came from TikTok creator Jourdyn (@jeauxp), who suggested boiling potatoes with the skins on in a mixture of chicken broth and water. Curious (and a little skeptical), I decided to test it out.
The difference was immediate. The potatoes absorbed a subtle, savory depth from the broth, creating a rich, umami flavor you simply don’t get from water alone. Leaving the skins on also added a rustic texture that made the dish feel heartier and more satisfying.
