Oven-Baked Sausage and Mushroom Pasta Gratin

Ingredients:

  • 12 oz pasta (penne or rigatoni work great)

  • 1 lb Italian sausage, sliced

  • 8 oz mushrooms, sliced

  • 2 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese

  • Salt and pepper, to taste

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1/4 cup fresh parsley, chopped

Directions:

  1. Preheat oven to 375°F (190°C).

  2. Cook pasta al dente according to package instructions. Drain and set aside.

  3. In a large skillet over medium heat, heat olive oil. Brown sausage slices, then remove and set aside.

  4. In the same skillet, sauté onion until translucent. Add garlic and mushrooms, cooking until mushrooms are tender.
