Tropical Bliss in Every Bite: Hawaiian Banana Bread

 

Ingredients:

2 to 3 ripe bananas, mashed

1/2 cup crushed pineapple, drained

1/2 cup shredded coconut

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

2 large eggs

1 cup granulated sugar

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

Optional Add-ins:

1/2 cup chopped macadamia nuts or walnuts for added crunch

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

Add the melted butter to the mashed bananas and mix well.

Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

Stir in the vanilla extract, crushed pineapple, and shredded coconut until well combined.

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the banana mixture, mixing until just combined. Be careful not to overmix, as it can result in a dense loaf.

If using nuts, gently fold them into the batter.

Pour the batter into the prepared loaf pan and spread it evenly.

Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Allow the Hawaiian Banana Bread to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.
