Yumminess! Learnt about this 6 years ago and it’s still on our menu!

 

 

Ingredients:

1/2 lb. bacon, chopped.

One cup yellow onion, diced.

Two cloves garlic, minced.

Four cups potatoes, diced (Yukon Gold or red).

Three cups corn kernels (fresh or thawed).

Four cups chicken stock.

One tsp. dried thyme.

1/2 tsp. black pepper.

One tsp. salt (adjust to taste).

One cup heavy cream.

Chopped chives or green onions for garnish.

Directions:

Step 1

First, fry bacon in a skillet until it becomes crispy, then move it to a slow cooker, leaving some of the drippings in the skillet.

Step 2

Then, in the same skillet, sauté onions until they turn translucent, adding garlic towards the end.

Step 3

After that, transfer the sautéed onions and garlic to the slow cooker with the bacon. Include potatoes, corn, chicken stock, thyme, pepper, and salt. Gently stir the ingredients.

Step 4

Next, cook on low for 7-8 hours until the potatoes reach a tender consistency.

Step 5

Finally, add in heavy cream and heat thoroughly. Adjust the seasoning as necessary.

Serve the dish hot, topped with chives or green onions, and enjoy it!
