Zucchini and Potato Patties

 

Instructions:

Step 1

Grate the zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.

Step 2

Peel and grate the yams. Rinse briefly in cold water, then squeeze out excess moisture.

Step 3

Finely chop the onion, grate the carrot, and chop the parsley.

Step 4

In a large bowl, combine grated zucchini, grated yams, chopped onion, grated carrot, parsley, eggs, black pepper, breadcrumbs, and shredded mozzarella cheese. Mix well.

Step 5

Form the mixture into small patties of uniform size.

Step 6

Heat olive oil in a frying pan over medium heat. Fry the patties until golden brown and crispy on both sides, about 3-4 minutes per side.

Step 7

Drain on paper towels.

Step 8

Serve hot, optionally with a yogurt dipping sauce or alongside a salad.
