4 boneless, skinless chicken breasts, cut into 1-inch pieces

1 cup corn starch

2 large eggs

1/4 cup vegetable oil

1/2 cup granulated sugar

1/4 cup ketchup

1/2 cup apple cider vinegar 
- 
2 tbsp soy sauce 
- 
1 tsp garlic powder 
- 
1/2 tsp sea salt

Salt and pepper, to taste 
Instructions
- 
Prep the Oven and Pan: Preheat your oven to 325°F (165°C) and line a 13 x 9-inch baking dish with parchment paper. Set aside. 
- 
Season the Chicken: Sprinkle the chicken pieces with salt and pepper. 
- 
Coat the Chicken: Place the cornstarch in a large zip-top bag, add the chicken, and shake until evenly coated.
