Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch square baking pan or a similar-sized cake pan. -
Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside. -
Cream Butter and Sugar
In a large mixing bowl, beat the softened butter and sugar until light and fluffy. -
Add Eggs and Vanilla
Beat in the eggs one at a time, then mix in the vanilla extract until well combined. -
Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Begin and end with the dry ingredients. Mix just until combined—do not overmix. -
Fold in Apples
Gently fold the diced apples into the batter. -
Transfer to Pan
Pour the batter into the prepared baking pan and spread evenly. -
Add Cinnamon Sugar Topping
In a small bowl, mix the sugar and cinnamon. Sprinkle evenly over the batter. -
Bake
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown. -
Cool and Serve
Let the cake cool in the pan for about 15 minutes before serving. Enjoy warm or allow it to cool completely before slicing.
