Lemon Muffin Cakes
1 box lemon cake mix
1 3.5oz pack instant lemon pudding
3/4 cup canola or vegetable oil
4 cups powdered sugar sifted
1/3 cup fresh lemon juice or lemon juice concentrate
Grated lemon zest from 1 lemon
3 tbsp canola oil
3 tbsp water
Preheat oven 350°
Spray muffin pan with cooking spray
Combine in bowl cake mix, pudding mix, eggs, oil. Beat for 2 minutes with electric mixer.
Regular size muffin pan, bake 15 to 18 minutes. Miniature 12 min.
Prepare glaze while little cakes are baking. Sift powdered sugar, add lemon juice, zest, oil & water. Mix until smooth, makes a tart glaze. Dip muffins or pour over. Let glaze set before storing in container.
